— Did computer work

J's Shrimp Scampi

  • 3/4 cup olive oil
  • 1/4 cup butter
  • 4 tsp minced garlic (or more)
  • 2 large green onions, chopped
  • 1-1/2 tsp crushed red pepper flakes
  • 12 oz. package medium frozen shelled and deveined shrimp, thawed, drained
  • 1/3 cup lemon juice
  • 1/4 cup chopped fresh parsley or 2 tbs dried parsley
  • 1-1/2 tsp sea salt
  • 1/2 lb angel hair pasta, cooked (don't overcook!)
  • parmesan cheese
In a large skillet, heat the olive oil and the butter over medium high heat. Stir in the minced garlic, green onions, and pepper flakes; saute for about 30 seconds. Add the shrimp and saute for 2-3 minutes, stirring often, until the shrimp turn pink and are just cooked through. Stir in the lemon juice, parsley, and sea salt. Serve the shrimp on a bed of pasta, drizzling some of the sauce on top. Top with parmesan cheese.

Serves 3.
We didn't sleep well last night because the RV was rocking and rolling from the howling wind. :(

We got out of bed later than usual. I moved the RV to position it for a better view around the shelter at our campsite. After parking the RV catty corner way at the back of the camp site, the view of the lake is fantastic! Had my normal breakfast, then worked up a blog entry. I did some computer work and checked some items on eBay.

Had lunch around 12:20 of ham and Genoa salami with Swiss on Cobblestone Mill Jewish Rye Bread. The bread had a decent density (not too fluffy), and it didn't have the nasty sour taste of the EarthGrains Jewish Rye. I did some computer work.

We had dinner at 6:05 of J's Shrimp Scampi over angel-hair pasta. It was tasty!

After doing the dishes, I did some more computer work. I had a slice of blueberry pie along the way.
